1 head cauliflower (approx. 2 lbs.), cut into bite-sized florets (approx. 8 cups) ¼ cup extra-virgin olive oil 5 cloves garlic, chopped 2 tsp fresh thyme leaves, chopped ¼ tsp crushed red pepper 2 tsp kosher salt Instructions:

Preheat oven to 450°F. On a baking sheet, toss the cauliflower florets with olive oil, chopped garlic, and red pepper. Sprinkle with chopped thyme and salt, and toss again. Roast until tender and golden brown, approximately 20 minutes. Transfer to a serving bowl and serve immediately.
